How to cook Deegcheh

Deegcheh is a traditional food from Mashad. Deegcheh is a saffron and sweet rice that it cooks by milk instead of water. Test and enjoy it !

Ingredients

  • Rice 250 gr
  • Sugar 250 gr
  • Milk 2 liters
  • Cardamom 10 gr
  • Saffron

Method

Step 1

Soak rice for 2 to 3 hours. Then drain it and let it boil with milk on the low heat until rice becomes like pulp.

Step 2

Then add sugar and cardamom and then cover the pot with napkin and a lid. Let the rice cooks for an hour.

Step 3

Spread hot rice on a rectangular dish and pour chopped pistachios. After it becomes cold slice it in a small pieces and serve it.
