How to cook Fried acanthus (Ghayremeh)

Ghayremeh is one of healthy foods in west of Iran in Kordestan. It is looks like European meals. This food serves by rice or bread.


  • 1 kg acanthus
  • Salt 1 tablespoon
  • Pepper 1 tablespoon
  • Cumin 1 tablespoon
  • Baking powder 1 tablespoon
  • 3 eggs
  • Melted Butter 3 tablespoon
  • A half cup of Milk
  • Saffron 3 tablespoon
  • Liquid oil 2 cups


Step 1

Wipe acanthuses and get their blades and chopped in arbitrary shapes. Put the flour in the deep bowl and add salt , pepper, cumin and baking powder in it.

Step 2

In another bowl, mix the eggs, water, butter and saffron(that mixed with a few hot water) and then add this mix to the flour.

Step 3

Mix them completely to obtain a thick mixture. If mixture is not thick, add a few flour to it.

Step 4

Then add acanthuses to the mixture and fry them in the hot oil. You can serve it by cooked rice and yogurt.
