Persian cooking recipes are fantastic in the world! One of the traditional foods in Iran that made in Esfahan, is Kaleh Joosh. This persian cooking recipe is different in another cities in Iran. This traditional food is rich to has calcium, phosphorus and protein.


  • 5 slim eggplants
  • Whey 500 gr
  • 1 onion
  • Tomato paste 1 tablespoon
  • A half glass of water
  • Salt half teaspoon
  • Turmeric half teaspoon
  • Dried mint 1 tablespoon
  • Dried bread, oil


Step 1

Chopped eggplants like cubes with skin and put them in a pan with salt and oil. Let eggplants cook on low heat.

Step 2

Fry chopped onion in another pan and fry it with mint and tomato paste and turmeric and whey.

Step 3

Then add water and boil until it becomes boil completely. Then turn the heat off and put it into a bowl and add dried bread and then add boiled mixture and finally add eggplants on it.
