Quince is one of healthy fruits. It used a lot in autumn and winter. This stew is from Gilan. It has different taste because quince and plum is the base of this persian cooking recipe. Test and enjoy it! Of course you will love it!


  • Thigh meat 1 kg
  • Fried onion 40 gr
  • Water 320 to 480 mile liter
  • 3 Quinces
  • Liquid oil 50 gr
  • Plum 250 gr
  • Sugar 3 tablespoon
  • Lemon juice 2 tablespoon
  • Saffron (mixed in hot water) 1 tablespoon
  • Salt and pepper


Step 1

Chopped meats in the form of 5 centimeters cubes and fry them a little. Then add fried onion and fry them for a minute.

Step 2

Add water and low the heat off until the meats almost cook. Take the skin of quince and its pits. Cut them in the form of chips but a little more thick.

Step 3

Then fried them a little in the a little oil and add it after frying to the stew.

Step 4

Then add plums and sugar and lemon juice and salt and pepper and saffron. Let the stew boil slowly.
