How to cook Tomato Ash

It is a dessert for meal in Iran. Some people use this food as main food. This persian cooking recipe is popular in over of Iran. Iranian people cook this Ash in different recipes and methods.


  • 3 onions
  • Oil 3 tablespoon
  • Pea 3 tablespoon
  • Rice 500 gr
  • Mix of Parsley, spinach, coriander and leek 1 kg
  • Tomato 2 kg
  • Minced meat 500 gr
  • Dry mint 1 tablespoon


Step 1

Chopped one of onions and fry it in the oil until be golden. Add 6 glass of hot water and peas and rice and salt and pepper and put them on the low heat until be cooked for 20 minutes.

Step 2

Mix the meats with 2 grated onions and salt and pepper and make it in the form of little bullet and add them into the Ash.

Step 3

Chopped vegetables and add them to Ash and let them cook on the low heat. Then grate tomatoes and add them into Ash.

Step 4

Fried mint a little in the oil and after Ash cooks, add to Ash and Enjoy it.
